Apple of My Eye

Let’s take a moment to talk about apples—a crisp, juicy fruit that thrives across New England every fall. We love to drive out to orchards, pick them, and smile for the camera. But what happens afterward? We usually stick to the basics: applesauce, pie, maybe an apple crisp. But there’s so much more we can do with them.

Have you ever considered using apples as a savory ingredient? Packed with vitamins and nutrients, they’re a perfect addition to our dinner plates. If you want to elevate your side dish game, try thinly slicing apples and fennel root (also known as anise) with crushed garlic. Start by sautéing the fennel in a tablespoon of olive oil with a dash of salt and pepper over medium heat until it softens. Then, add the apple slices and garlic, cooking until the aromatics caramelize. In just minutes, you’ll have a bright, flavorful, and unique savory dish that’s both delicious and nutritious.

My family loves pairing this dish with roasted pork loin and rice for a fall meal that bursts with flavor. To save time and money, I cook extra and freeze individual portions to enjoy throughout the year. Taking advantage of seasonal produce when it’s abundant not only benefits your taste buds but also your wallet. Finding foods that your family not only likes but loves—and that happen to be healthy—is key to making lasting improvements to your diet. This side dish could be one more step in the right direction.
